Fast-casual restaurant chain Jersey Mike’s Subs appointed Stacy Peterson to serve as president and chief operating officer.
Peterson joins Jersey Mike’s after serving as chief executive officer at Jeni’s Splendid Ice Creams. Her background also includes nearly a decade at Wingstop, ultimately serving as chief revenue and technology officer. Her resume also includes leadership positions with Service King Collision Repair Centers, CB Richard Ellis, FedEx Office and Blockbuster.
Peterson’s joining Jersey Mike’s reunites her with Charlie Morrison, the chain’s CEO. “Stacy was a key player in the growth and success of Wingstop when we partnered together there, and I look forward to bringing her expertise in digital, marketing and operations to Jersey Mike’s to accelerate our growth,” said Morrison in a release.
Jersey Mike’s operates more than 3,000 locations systemwide.
